Kickstart Pancake Day with a bacon-topped breakfast treat...
Ingredients:
- Iceland Luxury 2 Giant Buttermilk Pancakes with Salted Caramel Sauce, 20g*
- Iceland 8 Rashers Average Smoked Thick Cut Bacon, 400g
- Iceland Class A Free Range 6 Large Eggs
Method:
- Grill the bacon for 3-5 minutes under a medium heat, turning occasionally - we recommend frying until crispy.
- Gently fry your egg until it reaches your preferred consistency, but we find sunny side up works best.
- Grill the Iceland Luxury 2 Giant Buttermilk Pancakes under a pre-heated medium grill until golden brown on both sides.
- Plate up your fluffy pancakes in a hearty stack, and top with crispy bacon and your fried egg. Serve and enjoy!
Classic Blueberry Pancakes
Not all Pancake Day heroes wear crepes… save time with Aunt Bessie’s Pancake Mix!
Ingredients:
- Aunt Bessie’s Pancake Mix, 480g
- Farmer's Market Blueberries, 125g
- Bobby's Maple Flavour Syrup, 250g
- Sugar, ½ tbsp
- 1 medium egg
- 250 ml of cold water
- Arla Soured Cream, 300ml
Method:
- Place half a pack of blueberries in a pan and add half a tablespoon of sugar.
- Heat until blueberries are soft and sugar has dissolved.
- To make the pancakes, add 1 medium egg and 250ml of cold water to a bowl with the pancake mix and whisk until smooth. Transfer the mixture to a jug.
- Lightly oil a medium non-stick frying pan and heat until very hot. Pour in enough batter to thinly coat the base of the pan.
- Cook for 1-2 mins on a medium heat until golden brown on the underside.
- Turn over then cook for a further 1-2 minutes.
- Place pancakes onto a plate and spoon the blueberries over.
- Drizzle with maple syrup and top with a dollop of soured cream. Serve and enjoy!
Luxury Blue Cheese Pancakes

Ingredients:
- Iceland Luxury 2 Giant Buttermilk Pancakes with Salted Caramel Sauce, 20g*
- Iceland Luxury British Blue Stilton, 200g
- Iceland 8 Rashers Average Smoked Thick Cut Bacon, 400g
Method:
- Cut the Iceland British Blue Stilton into slices and place on top of the Sunblest 4 Giant Pancakes.
- Place under a medium grill until the pancakes turn golden and the stilton begins to bubble.
- Grill the bacon for 3-5 minutes under a medium heat, turning occasionally - we recommend frying until crispy
- Place the pancakes in a stack with layers of deliciously crispy bacon. Serve and enjoy!

Beef Brisket Pancakes

Ingredients:
- Iceland Luxury 2 Giant Buttermilk Pancakes with Salted Caramel Sauce, 20g*
- Iceland American Style Beef Brisket
- Arla Soured Cream, 300ml
Method:
- To cook the beef brisket, remove pouch from outer packaging, place sauce sachet into a bowl of hot water
- Place pouch into a microwaveable bowl and pierce several times
- Cook for 14 minutes and leave to stand for 1 minute
- Empty into a bowl and pull the meat apart with 2 forks, then stir in the sauce
- Grill the Iceland Luxury 2 Giant Buttermilk Pancakes under a pre-heated medium grill until golden brown on both sides
- Stack and layer the pancakes and sizzling beef brisket. Add a dollop of soured cream then serve and enjoy!
